Im on the fence whether I should fully implement a blockchain myself, or if I should fork one to see how it works on a production level. If I go this route, what would be a simple blockchain project to fork? Any language

I’m not necessarily looking for the easiest to learn, but more or less the most versatile/used

I’m trying to understand blockchains more but I’m having trouble grasping how new nodes can “pop up” and be integrated into the system without a centralized server
