Should I replace the Nest 2nd gen thermostat screen with e-ink? (opens in new tab)

I'm upcycling the Nest 2nd gen thermostat, which is being bricked by Google on October 25. One consideration was how much of the original thermostat to use; and if it made sense to replace certain old parts like the LCD with an e-ink screen.
