Watch "Halfcoordinated" speedrun NieR: Automata at the summer GamesDoneQuick event that just happened. Because the game allowed remapping of inputs (even on the controller) it meant that he could play the console game using only one hand.

I would think that some more specialist peripherals could also be used for people with even less mobility, so they could also play these games to some degree and enjoy them.
