That doesn't say anything about the servers timezones. SMTP is a service on top of those.

It seems unlikely that the SMTP process would run in a timezone different to the server. What benefit would that give?

They would operate a virtual machine-type layer on top of their actual linux machines. In the upper layer they could be doing whatever..
